Sustainable Food Systems [electronic resource] by
In response to the challenges of a growing population and food security, there is an urgent need to construct a new agri-food sustainability paradigm. This book brings together an integrated range of key social science insights exploring the contributions and interventions necessary to build this framework. Building on over ten years of ESRC funded theoretical and empirical research centered at BRASS, it focuses upon the key social, economic and political drivers for creating a more sustainable food system. Themes include: regulation and governance sustainable supply chains public procurement sustainable spatial strategies associated with rural restructuring and re-calibrated urbanised food systems minimising bio-security risk and animal welfare burdens. The book critically explores the linkages between social science research and the evolving food security problems facing the world at a critical juncture in the debates associated with not only food quality, but also its provenance, vulnerability and the inherent unsustainability of current systems of production and consumption. Each chapter examines how the links between research, practice and policy can begin to contribute to more sustainable, resilient and justly distributive food systems which would be better equipped to 'feed the world' by 2050.
Sustainable Diets by
One of the many benefits of the U.S. food system is a safe, nutritious, and consistent food supply. However, the same system also places significant strain on land, water, air, and other natural resources. A better understanding of the food-environment synergies and trade-offs associated with the U.S. food system would help to reduce this strain. Many experts would like to use that knowledge to develop dietary recommendations on the basis of environmental as well as nutritional considerations. But identifying and quantifying those synergies and trade-offs, let alone acting on them, is a challenge in and of itself. The difficulty stems in part from the reality that experts in the fields of nutrition, agricultural science, and natural resource use often do not regularly collaborate with each other, with the exception of some international efforts. "Sustainable Diets" is the summary of a workshop convened by The Institute of Medicine's Food Forum and Roundtable on Environmental Health Sciences, Research, and Medicine in May 2013 to engender dialogue between experts in nutrition and experts in agriculture and natural resource sustainability and to explore current and emerging knowledge on the food and nutrition policy implications of the increasing environmental constraints on the food system. Experts explored the relationship between human health and the environment, including the identification and quantification of the synergies and trade-offs of their impact. This report explores the role of the food price environment and how environmental sustainability can be incorporated into dietary guidance and considers research priorities, policy implications, and drivers of consumer behaviors that will enable sustainable food choices.

And the challenge of feeding this rapidly growing population is being made greater by climate change, which will increasingly wreak havoc on the way we produce our food. At the same time, we have lost touch with the soil--few of us know where our food comes from, let alone how to grow it--and we are at the mercy of multinational corporations who control the crops and give little thought to the damage their methods are inflicting on the planet. Our very future is at risk. In Consumed, Sarah Elton walks fields and farms on three continents, not only investigating the very real threats to our food, but also telling the little-known stories of the people who are working against time to create a new and hopeful future. From the mountains of southern France to the highlands of China, from the crowded streets of Nairobi to the banks of the St. Lawrence River in Quebec, we meet people from all walks of life who are putting together an alternative to the omnipresent industrial food system. In the arid fields of rural India we meet a farmer who has transformed her community by selling organic food directly to her neighbors. We visit a laboratory in Toronto where scientists are breeding a new kind of rice seed that they claim will feed the world. We learn about Italy's underground food movement; how university grads are returning to the fields in China, Greece, and France; and how in Detroit, plots of vacant land planted with kale and carrots can help us see what's possible. Food might be the problem, but as Elton shows, it is also the solution. The food system as we know it was assembled in a few decades--and if it can be built that quickly, it can be reassembled and improved in the same amount of time. Elton here lays out the targets we need to meet by the year 2050. The stories she tells give us hope for avoiding a daunting fate and instead help us to believe in a not-too-distant future when we can all sit at the table.
